The landscape and the breed are not separate things, Sarah — that is the first misunderstanding I would like to correct. We did not arrive in Dumfries and Galloway and adapt. We were, in a very real sense, made by it — by the granite uplands, the wet Atlantic winds, the rough grazing that would send a less considered animal into decline. The Galloway is one of the oldest beef breeds in Britain, with records stretching back to the seventeenth century, and every generation of that history was a negotiation with difficult ground. To understand us, you must first respect what shaped us.

You mention difficult ground and wet Atlantic winds — and I have to ask about the coat, because it is genuinely remarkable. Can you walk us through what's actually happening with a Galloway double coat, and why it matters more than people might assume?
Magnus
The double coat is not ornamentation — I want to be clear about that. The outer layer is thick and wavy, designed to shed rain; the inner layer is a fine, dense undercoat that provides insulation in a way that competes with any artificial shelter you might construct. What this means in practice is that I do not require the same housed wintering that many other breeds depend upon, which represents a very significant reduction in cost and infrastructure for a farmer operating on thin margins. I shed the inner coat naturally as temperatures rise, which means I am not carrying unnecessary thermal burden through the summer either. It is, if I may say so, an elegant system.

That leads neatly to something the regenerative farming community talks about a great deal — feed efficiency and the ability to thrive on marginal land. Is the Galloway's reputation in this area deserved, or has it been romanticised?
Magnus
The reputation is deserved, and I say that not out of vanity but out of observable fact. We are efficient converters — we will extract nutrition from rough pasture, heather, and coarse grasses that would offer very little to a breed selected for performance on rich lowland feed. This is not a consolation prize for living somewhere inhospitable; it is a genuine metabolic characteristic that makes us commercially viable precisely where other breeds become expensive liabilities. I have known winters on this ground, Sarah — proper winters — and I can tell you that surviving them without supplementary feeding is not a romanticised notion. It is simply what we do.

I'm going to ask you something that might require some diplomatic skill — how do you regard the other major beef breeds? The Herefords, the Angus, the continentals?
Magnus
I regard them with measured respect, as one regards any creature that has been asked to do something specific and has been shaped accordingly. The Aberdeen Angus, for instance, is a fine animal with an admirable marbling record and strong maternal qualities — we share Scottish roots, and I acknowledge that kinship. The continental breeds — your Charolais, your Limousin — are impressive in terms of lean carcase yield, and there are farming systems where that is exactly what is required. I would simply observe that efficiency and resilience under genuine hardship are not always the criteria by which cattle are judged at the point of sale, and that is perhaps a conversation the industry needs to continue having.

Let's talk about calving — it's one of the most anxious times in any beef operation. What should people know about Galloway cows when it comes to ease of calving and how they mother?
Magnus
The Galloway cow is, in my experience, possessed of a maternal instinct that is both fierce and sensible — a combination that is rarer than you might hope. Calves are small and well-shaped at birth, which means intervention at calving is genuinely uncommon, and that matters enormously to a farmer working alone on a remote holding. Once a calf is on the ground, the cow's attentiveness is formidable — she knows where her calf is, she knows what the weather is doing, and she makes adjustments accordingly. I have observed that the calves themselves inherit a certain robustness from the outset, which I attribute not merely to genetics but to the quality of the mothering they receive.

What do you think humans still fundamentally misunderstand about the Galloway breed?
Magnus
They confuse hardiness with simplicity. Because we do not require elaborate management — no heated housing, no constant intervention, no expensive supplementary rations on rough ground — there is a tendency to assume we are a less sophisticated animal. The opposite is true. Our hardiness is the product of extraordinary genetic complexity, of centuries of selection pressure that has refined our physiology into something genuinely remarkable. We are not a peasant breed that happened to survive. We are a highly evolved system that has been optimised for a specific and demanding environment, and that optimisation has real, measurable commercial value.

Looking forward — what does the future hold for the Galloway? With increasing interest in regenerative agriculture and extensive beef systems, does your moment feel like it's arriving?
Magnus
I have never considered it a matter of moments, Sarah — the Galloway has endured long enough to be indifferent to fashion. But I will say this: the questions that regenerative agriculture is beginning to ask — about soil health, about low-input systems, about the relationship between extensive grazing and landscape management — are questions to which the Galloway has been a working answer for three hundred years. If the industry is finally catching up, I welcome that. I would simply caution against treating ancient breeds as novelties. We are not a trend. We are a proven system.

With the Aberdeen Angus premium disappearing from many dairy contracts, does that shift the commercial conversation toward breeds like the Galloway? Is this a moment where the beef-on-dairy farmer might finally look your way?
Magnus
It is a question I find more interesting than flattering, Sarah. The Aberdeen Angus premium was, for many years, a convenient shortcut — a breed name that promised eating quality without requiring the buyer to think too carefully about what was behind it. As that premium erodes, farmers are being asked to justify their sire choice on actual merit rather than reputation, and that is a conversation in which the Galloway is rather well placed. We offer genuine feed efficiency on marginal land, excellent calving ease, and a carcase that rewards the butcher. What we have never had is the marketing infrastructure that the Angus built over decades. Whether dairy farmers making crossbreeding decisions will invest time in understanding that is another matter. I hope they will. The numbers, when honestly examined, are persuasive.

If we feed you like an Aberdeen Angus, will you grow like an Aberdeen Angus?
Magnus
A fair question, and one I am pleased to answer honestly. Feed us well — proper nutrition, good quality forage, supplementary concentrates where appropriate — and yes, we will respond. Our growth rates improve meaningfully with better feed, and the carcase quality follows accordingly. What we will not do is waste it. Where a higher-maintenance breed might convert feed into excess fat or simply burn through it, we put it to work. The efficiency that makes us valuable on rough ground does not disappear when the ground improves — it simply means more of what you invest ends up on the hook.

And finally, Magnus — a personal question. What does life on the moors actually feel like? What do you carry with you when you're out there?
Magnus
There is a kind of clarity that comes with cold ground and open sky that I find very difficult to explain to those who have not experienced it. When the wind comes in off the Solway in November and the light is low and grey, most creatures seek shelter. I do not. I face it. And in facing it, there is a sense of being entirely in the right place — of being built for exactly this moment, on exactly this ground. I carry nothing when I am out there, Sarah. That is rather the point. The moor asks you to be sufficient, and we are.

There's a long-standing claim among breeders that the Galloway bull is exceptionally fertile — more so than many other beef breeds. Is that myth or fact?
Magnus
It is fact, though I would prefer the word 'dependable' to 'exceptional' — dependability being the more useful quality in a working bull. Galloway bulls are known for high libido, good semen quality, and the physical constitution to work extensive ground without the kind of structural breakdown that affects heavier, faster-grown breeds. A bull that cannot cover a large hill herd reliably is simply an expensive ornament. We are not ornamental. What the myth gets wrong, if there is myth involved, is the implication that this fertility is somehow surprising. It is not. It is the natural consequence of a breed shaped by environments where reproductive failure was not tolerated.

I'd like to turn to crossbreeding now, Magnus. There's growing interest in Galloway crosses here in Scotland — the Blue-Grey in particular, and the Galloway crossed with Aberdeen Angus. What's your view on these combinations?
Magnus
Crossbreeding is, I must confess, a subject on which I hold firm opinions. The Blue-Grey — the Galloway crossed with the Whitebred Shorthorn — is Scotland's classic, time-tested F1 maternal cross, and for very good reason. It produces maximum maternal heterosis: highly fertile, long-lived females, perfectly adapted to harsh Scottish hill winters. As for crossing a Galloway bull with an Aberdeen Angus herd, that combines two of Scotland's most iconic native breeds and yields excellent hybrid vigor — hardy, easy-calving offspring well-adapted to our climate. Both pairings produce vigorous F1 offspring with faster growth, greater disease resistance, and robust calf survivability. And I should mention the calving ease — Galloway bulls sire calves with a low birth weight and a high will to live, ensuring smooth, unassisted calving even on heifers. The resulting offspring are efficient forage converters, require less winter housing, and produce premium, well-marbled beef. It is, in short, a strategy I thoroughly endorse.

Magnus, I'd like to turn to the question of cow size — something that's generating real conversation in the industry right now. There's a recent article by Kim Ricardo from South Dakota State University that's been making the rounds, and it confirms what low-input breeders like Pharo Cattle Company have been saying for forty years: that increasing cow size is a mistake. The numbers are striking — for every 100-pound increase in cow size, weaning weight only increases by about 10 pounds. A 1,500-pound cow weaning a 550-pound calf achieves only 36% efficiency, while a 1,000-pound cow weaning a 500-pound calf achieves 50%. A land base that can support 100 1,500-pound cows can support 135 1,000-pound cows, and the smaller cowherd generates $55,000 more. Ricardo concludes that while larger cows produce slightly heavier calves, the gains are minimal compared to the increase in input costs and the reduction in herd size they require. Given all of this — is the Black Galloway the ideal low-input cow?

Sarah, I must say it is very refreshing to see academia finally catching up to what we have known for centuries. Pharo Cattle Company has been the lone voice in the wilderness on this, and they deserve considerable credit for holding the line while the industry chased ever-larger frames. Let me address the data directly. The principle is simple and it is unassailable: smaller cows will always wean a higher percentage of their own body weight than larger cows. That is not opinion — it is biology. When a 1,000-pound cow weans a 500-pound calf, she has achieved 50% efficiency. When a 1,500-pound cow weans a 550-pound calf, she has achieved 36%. The larger cow has consumed significantly more feed, occupied more ground, and cost more to keep — and for what? Ten pounds of additional weaning weight per hundred pounds of cow. That is not an investment that pays; it is an investment that bleeds.

Now, you ask whether the Black Galloway is the ideal low-input cow. I will answer plainly: we are built for exactly this. A mature Galloway cow weighs between 1,000 and 1,200 pounds — she sits squarely in the efficient end of that data. She weans a calf that represents a high percentage of her own body weight, she does it on rough forage that would starve a larger, higher-maintenance animal, and she does it without the expensive winter housing and supplementary rations that erode the larger cowherd's margins. When Ricardo says that cow size is a critical factor in profitability within a commercial cow-calf enterprise, she is describing a truth the Galloway has been living for three hundred years. And when she warns that cow size will quickly separate the winners from the losers when calf prices fall — and they will — I would simply observe that the Galloway has already chosen its side. NOW is the best time to make the transition from high-input genetics to low-input genetics, and we have been ready for that transition rather longer than most.

Magnus, one more question before we part — and it's something I've heard whispered among breeders for years. Is it true that Galloways are one of the longest-lived of all cattle breeds? And if so, what's the secret?
Magnus
It is true, Sarah — and the secret, if we must call it that, is the coat. Our extraordinary lifespan is heavily tied to our unique double-layered coat: a wave of long guard hairs over a mossy undercoat. This offers such flawless insulation against freezing rain and snow that we do not need to develop a thick layer of outer body fat to stay warm. And that, in turn, places far less metabolic stress on our organs over winter — keeping us structurally sound and metabolically youthful for years longer than short-haired breeds. Where other breeds burn through their reserves and wear their bodies down each hard season, we simply endure. The coat is not merely armour against the cold, Sarah — it is, in a very real sense, the reason we outlast them.
